FYI for those considering a chamber vac. I have the VP215 in hand. The max sized 10x13 bags aren’t going to do very large roasts. Some things will have to be cut into smaller portions than I had anticipated. It’ll work for most of what I wanted to do though. The VP230 is a pretty good jump in price (~$450 compared to Amazon VP215 deal) but a good jump in bag size. Always the dilemma of do I go bigger and how much will I actually use it for that??? :)

I struggled with choosing the size too. I use 10x15 bags as my large bags in the vp215, they fit well. I routinely put 5 pounds of meat in them. For roasts I always cut the larger ones like elk top and bottom rounds into 1/2 or 1/3rds anyway - don't sell it short - you can put a damn big roast in a 10x13. The only think realistically I wanted to and couldn't seal in the past was a whole antelope quarter and it isn't like that would fit in any of the options.

Were I to go bigger a second seal bar would be driving it, but I'm good.

^^^ Thx! I was looking at it and thought a longer bag would fit just fine. I think overall for the price it’ll do me well.

After a half dozen test runs it’s a huge improvement over a sucker sealer :)

I bought the 95. I hope to try it out this weekend. I have been using a Weston Pro 2200 for several years. It has worked, but a few times I have taken a bag out of the freezer that wasn't still sealed.

I use it for game birds and fish, so the 95 is a convenient size. It fit nicely in an available space on our counter. I also buy bulk meat and freeze it. I also like to smoke 2 or 3 briskets and vacuum seal portion sized bags of it and freeze them. We drop them in a pot of boiling water to heat them up. Same with pork butts.

Is the VP 95 big enough to seal 2 pounds of hamburger? If so, what would be the appropriate bag size?

@Tod osier …thanks! The VP95 specs don’t indicate a 10x15 bag is compatible. The largest bag is a 9x12.

Are you speaking in generalities or suggesting that a 10x15 fits?

I’m trying to decide whether to go with the VP 95 or the LEM VacMax Pro from Costco

He replied to me that a 10x15 fits in the VP215. They state the max for the VP215 is 10x13 but when using a 10x13 it's obvious you can easily put a longer bag in it. I ordered some 10x16 and will just fold the bottom up or drape the top over the front of the seal bar a bit.

Sorry, no idea on the VP95 if a 10x15 bag fits, but the VP95 unit specifies an 9 x 12 and 2# of ground meat will easily fit in that bag .

Thanks for the heads up. Grabbed one. It will be my first chamber one. Something about vac sealing stuff just gets my goat.

I use a sucker sealer. On these do you have to use their bags or are other bags available? Why is the chamber type better? I have never used one of the chamber types.

Lots of bags are available from many sources. Bags are cheaper for a chamber vac. Buying in bulk gets the per bag price way down. Chamber vac is far more versatile and faster than a sucker but it comes at a much higher price. They’ll do liquids like soups and chili.

Ordered the VP215 from WebstaurantStore.com. $849+tax & free shipping. Ordered over the weekend and received shipping confirmation Monday morning, due to show up on Wednesday. Thank you for the post on this convinced me to finally pull the trigger after a long time of mulling over the purchase. Looks like their deals on pre-made 4mm bags is pretty good as well.

Any suggestions on a stainless cart that this would fit on? Read that it is heavy and it would be a lot easier to wheel it around, especially for the wife.

You will like that chamber!

It is freeking heavy. I had it for years on the countertop of the meat cutting room, but about a year ago I put it on the floor in an unused corner across from the cutting counter, it works surprisingly well on the floor. I was going to get a cart, but never did and now we are just used to it. Maybe that is a lazy solution, but I'm happy with it.

After reading this I found a deal on a vp230. I used it to butcher an elk last week. My favorite purchase in a long time.
