Here is a video I made for skinning for life-size and also the gutless method.
This is how I like my customers to skin. It makes the mounting process much easier. This should be done for every animal except bears . Bears can be skinned up the belly and arms.
This is a topic that should be pinned to the top of someone is a moderator or has the power to . I see this topic a lot and I haven't seen a good video on how to do it out there. So I'd like to share how to to get good information out there and help everyone with the best mount possible
I hope this helps some people.

You said "makes the mounting process much easier" - I really don't care if it is easier, I care if it results in a better finished mount. So why is a dorsal cut preferable to a case skinned with "Y" cut for antlers? Seems like there would be a whole lot less stitching with a case skinned hide, even if the taxidermist needed to make cuts later to allow assembing the form inside the hide.

I'm sure I'm not the only one who would benefit from an explanation so we can be prepared if the time comes we need to do it. Thanks

Oh my. As a taxidermist myself and a commercial meat processor I have so much to say about this video but I can’t, I just can’t.

Having one clean cut across the back with relief cuts is easier. You won't do a life-size deer with a case cut. You could cut up the belly but it's alot of sewing and a jigsaw puzzle. Again not for everyone. But I don't see anyone else putting themselves or information out there .
Case skinning small stuff like a mink or squirrel is fine but not this large stuff.
