Eating iguanas seems not far enough from Chinese eating the shit in wuhan...not that it can't be good, but many made a fuss about their "exotic" foods, and here we are talking about eating vermin.
Americans have commonly hunted/eaten things like: frog legs, alligators, rattlesnakes, rabbits, squirrels, opossum, raccoon, crawfish.
The iguanas eat plants. As long as proper handling and thorough cooking I wouldn’t be concerned.
I’d be more concerned about proper handling/cooking of chicken/poultry. Pork has risk of trichinosis. The FDA even lowered the standards on what’s allowed in ground pork products.
