Salsa & Hot Sauce!

Anything with hatch green chili and a little jalapeños for some extra kick.

My wife gets the trader Joe's/whole foods stuff...but for a regular store version I like the 505 brand stuff

Who's got some good hot sauce recipes? I've got a ton of peppers I just picked but my tomatoes are behind; I already canned 24 half pints of sliced banana & jalapeno peppers. I've two 1gallon bags full of jalapenos, bananas, chilis, & habaneros.

Get those suckers in a salt solution and ferment for a couple weeks. I just go 4% non-iodized salt and then cut my peppers in half. Some fresh garlic, a little onion, and then let them sit. You want all the peppers to be submerged to avoid any mold. I've tried 1 week and up to 4 - sweet spot seems to be about 2.

I'll get a pic of my last batch. It will tone down the habanero heat enough to actually enjoy the flavor they bring.

Target has some mango salsa the wife buys probably my favorite store bought. We like to use Mrs wages to can salsa. I love that stuff. As for hot sauce. Check out secret ardvark habanero.

I can’t believe nobody has mentioned Allsups hot sauce yet. It may come from a gas station, but that stuff is awesome.

Just good old fashion Tabasco sauce goes on pretty much everything I eat, and every hunt, but over the last few years I’ve also really taken a liking to ghost pepper powder. It’s kind of pricey but man, it sure is tasty and has a nice natural smoky flavor to it as well.

I have 6 eggs on four corn tortillas with cheese in between most everyday for breakfast and sometimes for lunch. I rotate through my sauces, but the mango Maria is great. What others do you like?

Salsa: Mateo’s Hatch Green Chile
Hot Sauce: Tapatio from the store, but my favorite is a home brew of red jalapeños, lime juice, and some vinegar.

I married a gal who is first generation from Mexico, and now for the past 25 years I have had homemade hot sauce and salsa with my food, whether I like it or not. My wife makes a green salsa with avocado, chiles, and tomatillos that goes great on everything.
Is she willing to share any recipes??
