Pachmyer has several styles, which model/type would you recommend?
 
Pachmayer 752B small fits the Rokstok. comes in .6", .8" and 1" thick.

The 752B of all sizes have a metal frame according to each size so you can only grind about 3/16" in from any side.

The Pachmayer 500B and decelerator youth/xs fit the Lite.
The 500B is .5" thick, no frame.
The Decelerator youth is 1" thick and has washers around the screw holes, no frame.

Btw- Brownell's is out of the 500B/youth...

Awesome, thank you sir! Just ordered two 752B's and some Pachmayr spacers to play with LOP.
 
Since I’ve never done a grind to fit, what is the weapon of choice for the grinding? Belt sander? Disc sander? Sandpaper by hand? Or am I making this harder than it needs to be and overthinking it?
Belt sander, then finish by hand with oil/soap/water and a wet sanding block. There's a really good youtube video by one of the manufacturer's but don't over think it. I think he finishes his with Lemon Pledge or something like that; I didn't have any and life went on.

I did mine with a couple layers of blue tape on the stock figuring when the tape started to sand off it's time to quit. It only took a couple minutes to knock it out. The chatter marks you see in some of the photos above are from bouncing from pushing too hard or coming in at a steep angle so avoid that.
 
Are folks changing out recoil pads on rokstoks for increased LOP, or are there some other benefits?
LOP. I only needed 1/2" to get proper eye relief on a Maven RS1.2 with the front ring on the front most recoil pin and the erector housing of the scope almost touching that ring.

The 1" pad resolved the issue without adding a spacer kit.
