Recs on sausage and stick seasonings

Giving it a go for my first time making sausage links and snack sticks with my deer and some elk. Looking for recommendations from those of you who are seasoned (Pun intended) with this. Thanks in advance!!

Craft Butchers Pantry has a pretty good selection of natural casings. Shipping can be a little spendy but I’ve never had problems with quality when purchasing from them.

why is it so hard to find Elk Sausage Recipes on the internet? I have found a few but I expected a lot more.

Never used pre-made seasonings, my recipe is from a old hunting buddies dad many years ago, over the years my dad since passed has tweaked it a bit and now there are guys who beg for it. It is a secret like bushs beans only the dog does not even know it. Sorry cannot help you out.

The pre made kits are easy. I used to use high mountain. They make it nearly impossible for you to screw up. Since I have kinda started my own recipes. I bought a sausage making book off Amazon to get base recipes so I have the right cure and have since tweaked it. I add cheese and jalapeños sometimes too.
