Summer Sausage Recommendation

I am looking to make my own venison Summer Sausage this year. What is everyone's favorite seasoning blend? I have had good luck with Bearded Butchers Sweet Spicy Smokey blend for sticks so was thinking of trying their summer sausage. I use AC Leggs for breakfast sausage and I know they have some summer sausage blends as well.

High mountain jalapeño and cheese summer sausage kit. I add an extra pound of high temp cheese to 25 lbs of meat
 
For the purposes of accuracy, actual summer sausage is a fermented sausage and that's what gives it the funky/sweet taste and makes it stable at room temp for so long. The summer sausage kits do not involve a fermentation process. I'm not sure you could technically consider that "summer sausage" -rather, they are smoked sausages.
