Nice! Do you think it matters what smoke pellets you use? I hear about 'apple wood this' and 'hickory that' but don't know if it makes an actual difference to a smoker newbie.Season a length of it with Alpine Touch Prairie Fire. Smoke at 230 until it hits about 115 or 120. Then sear in a cast iron skillet or on a hot grill. Cut like a prime rib. Risotto with asparagus and morels you foraged in the spring.

I can't tell the difference in pellets even on super long smokes for ribs and pork butt. I just buy whatever Costco has in stock. Just don't buy cheap pellets. Stick with a good brand from a company that makes grills. The cheap ones don't hold together as well and you end up with a lot of dust in the hopper which screws up the temp consistency.Nice! But those who've had foul experiences with antelope meat... What do you think was wrong?
I've only killed 2 antelope and both have been tasty, but I'm always hearing folks say "my dogs won't eat it" or "I had to throw it all out it was so bad"
Both goats I've killed I made sure to break down and get cooled off as fast as possible, perhaps people with negative experiences are letting them sit around in the sun for hours? I'm genuinely curious.

Diet also plays a part. The one I shot that was living off cholla flowers and those who are finding winter wheat, will be better than sage fed. But a sage fed pronghorn that was well cared for by the hunter will be delicious.
Well, I am coming up on two dozen antelope and have never had a bad-tasting or anything but tender one. The guys who complain are the guys who don't cut them up and get them on ice right away. Antelope is a tender, delicate meat, and it's often killed during warm weather. So, be smart and take care of that meat!Hate to hijack this thread,

Here’s the skinny good recipe less is best.I head out in the morning to try and fill my doe antelope tag. Been several years, but can't wait for the antelope food in our house again. Like others have said, I find antelope easy to make amazing. But I honestly found a very simple, olive oil, Salt/Pepper and maybe a little garlic powder makes it wonderful. I came across this photo from several years ago. We found a stray package of lope steaks in the freezer and decided to enjoy the warm spring evening around our fire pit. Hot dog roasters and some steaks led to some wonderful food. View attachment 776436
