My new guilty pleasure.

Pachrat Nests

Makes about 24

1 - 10 oz. Bag Reese's Peanut Butter Chips
1/4 c. Darigold Unsalted Butter
1/4 t. Vanilla
1 1/2 c. Country Choice Organic Gluten Free Rolled Oats
3/4 c. Bob's Red Mills Shredded Unsweetened Coconut

Melt butter in microwave safe bowl. Add peanut butter chips and melt, don't burn. When creamy add vanilla. Stir in oatmeal and coconut. Shape into balls on waxed paper and refridgerate until set. Consume and enjoy!

Updated with nutrition info best i could figure it. Still may try a butter substitute to drop the fat a little if i can get a similar consistency and taste. I might also eliminate the vanilla to see what i think. They are pretty good as is though.

The name of your snack really got to me. We constantly have a packrat problem at our property in the mountains. Snack sounds good though.

Toasting the oats was enjoyable. I substituted natural peanut butter for the butter, I liked that better. I also garnished with a smidge of kosher salt. Jury is still out on that but it was pretty good. All in all a audience and easy snack to whip up.
