Packable fishing rod for St Kitts?

My wife is going to be leaving for vet school on St Kitts. I wanted to get her a fishing setup that would work for fishing from the shore. Looking for rod/reel advice, line and lures would be helpful too. Preferably advice from someone with experience in the Caribbean.

Just a spinning rod setup? Looking at a map of St. Kitts, there doesn't seem to be much for flats, so for shore fishing I would look at a light surf rod setup. I would look at an 8ft-9ft St. Croix travel surf spinning rod and match it with a 5000 size spinning reel rated for saltwater and 300+ yards of braid.
