Old Sausage Making Kits

While rummaging through the pantry recently I came across a Cabela’s Italian sausage kit. The Best By date was nearly 3 years ago. It’s been kept dry and unopened. I doubt anything in this has actually spoiled but what would you think about using it?
 
I would try some first. Hate to ruin a large batch of sausage. If you can just take enough for a half pound or so and mix it with burger and fry it up.
 
Thanks. I think that’s the right idea. Because the ratios are easier in bulk I may go ahead and do about 5lbs and see how that turns out. You are correct in that I do not want to waste a lot of meat and time.

This. Make up a half pound first and try it. If it tastes OK and you don't get sick or die, you're good to go.
