I’ve already ran both cartridges through a ballistics calculator and I’ve taken game up to 400 yards, I know these are both in the opposite side of the spectrum that’s why I was seeking others peoples opinions on a practical range for out west for an average shooter.Your choices might quite possibly the two cartridges furthest apart on the spectrum of usefulness. Id fully recommend you dont take a shot past 50yds and you get something you can practice with.
Start reading about ballistics and go practice. Go read about terminal ballistics and then read it all over again. Its going to challenge everything you've ever been told. Just trust it and you'll end up a much better shooter at the end of the day.
If you have to have a 7mm, then a 7-08 because it will do what you want and you will shoot it more. A 6 creed would do the same thing or more with even less recoil. If you want to spend that money on one gun, get a seekins IMO. But if you want the smart play, buy two threaded tikkas, one in 223, and a can. Don't forget your optics too.... you really need to check some ballistics charts on the two you mentioned or any rifle youre interested in for that matter.

Yeah I totally get the jump being weird, I started hunting when I was 17 with a buddy who hunted his whole life and got a 308 the next year for my self to hunt with. But with getting by older and personal responsibility I had to get rid of the 308 and only duck hunted. But now since I’m a full grown adult with a house and a good job I figured it’s time to jump back in to hunting off of borrowed gear. Definitely looks like I need to go to a gun store and just take a looks at stuff that fits me well before making any decisions.Quite a jump from borrowing other peoples rifles to a Qfix and niche calibers like 8.6 and 7saum. Id agree with the crowd of essentially any generic short or standard action caliber with good factory ammo support to start. I'm partial to the 270 win but if you want .284 and above 7mm-08, 308 and 30-06 are all very good options. Rifle wise a bergara b14, tikka, howa/vanguard and x bolt are all great options that are well priced. Put some good glass on the rifle and don't overcomplicate it.
With my personal biases, I'd probably end up with a 7mm rem mag or 6,5 prc if I were looking to shoot 5-600 yards and worried about ballistics without handloading.
Yeah I can imagine it can take a toll, I personally couldn’t imagine shooing high round counts commonly. Do you have a 7 Saum yourself? If so what barrel length are you running suppressed?7SAUM is a lot of fun, especially suppressed. It’s not a “shoot it all day” in hunting gun weight rifle, but it’s still an excellent cartridge.

Those two rifles and calibers are at such opposite ends of the shooting spectrum that I don't understand how they would be the two choices that you're trying to narrow down.
Just buy another .308 and be good for everything for everything you want to do with easy ammo availability.
