So for all my Alaskan hunting adventures, small game has pretty much eluded me...until yesterday. Luke and I spotted some spruce grouse on our way home from the cabin. One shot with the Rossi 20 gauge and it was all over!

Luke got a couple as well.

Brought them home and cooked up our favorite appetizers to share with friends. Marinated the breasts in teriyaki, then wrapped in bacon with jalapeño and pineapple and grilled.

Delish!

You do realize if you keep making my mouth water with all your cooking posts I'm going to start knocking at your door around dinner time.

Never heard a blue grouse called a thunder chicken!

Nice work!

Those are spruce grouse and thunder chicken is a common name for them around here. They tend to hold tight in cover until you dang near step on them then explode with thunderous wing beats scaring the heck out of you! They are a lot of fun in thick country with lots of bear sign. We flushed a covey of 6 climbing through some really thick willows bordering a blue berry patch. I was AMAZED at how fast my buddy who was walking point jerked that big 480 super red hawk from his chest holster! I don't think he registered what made the commotion till he heard me laughing about 30' behind him.

This one time... At moose camp.....I heard a squirrel and pulled out my S&W 500. The End

Looks delicious! I'm gonna have to try that with my next bird harvest! Thanks for sharing.

Congrats on some fine table fare. When we hunt Colorado and we find the grouse(Mountain Chicken) we usually have a few for dinner.

Headed out on a winter camping trip in a week or so, hopefully we can find some more! Great eating and fun to catch :)
