Have you looked at the Human Powered Trails in Lacrosse, WI. I havent been down there yet but I just got a bike this spring and the guy at the bike shop was talking about the great trail system there. It's around the area of Grandad bluff and offers about a 600 foot gain in elevation. Nothing to westerners, but not that easy to find in Wi. They arent open yet but I'm planning on trying them out as soon as they are.
