I got my first archery buck opening day. Super fun. Thinking of making al big pot of chili for my coworkers that stepped up and covered my work allowing me to go on our busiest single week.
Rump meat will work?

Congrats on the buck!

Rump will work, but for chili I use the front shoulder of whitetails (ground or cubed) ... it's similar to a chuck roast on a beef: a lot of connective tissue (but without the extra fat on a beef). If you have a grinder, I'd recommend that, but a low & slow braise will loosen a lot of the connective gelatin, too. It doesn't hurt to add a little pork fat to it either.
