I have been lucky enough to draw a Montana Moose tag. Leaving next week to hunt. During my research have discovered that many moose have an arterial Parasite. I realize I can cook all the meat to well done and kill the parasite, but don’t want to cook Loin and Tenderloin to well done. Anyone else dealt with this or thoughts on the Parasite and moose meat. Parasite elaeophora schneideri

So, I just bumped into this post and may be late with a response, but for what it is worth… I conducted a google scholar search on this parasite. Here are a few takeaways from the research articles I skimmed in that process.

1. Humans are not susceptible.
2. This parasite is found in multiple cervid species (moose, elk, mule deer, and white-tailed deer) as well as bovids (big horned sheep).
3. It is geographically distributed in the southeast, south central, and western U.S.
The intermediate host (the vector that spreads the parasite to the moose, elk, sheep, etc) is a horse fly.
4. The worms are not generally found in the muscle tissue and, I my NONPROFESSIONAL opinion, should not be a concern when eating skeletal muscles. The microflaria are sometimes found in the capillaries of the heart. Still likely not an issue for consumption, but that would be up to you to determine.

I hope you were successful in your hunt and find this helpful.

Happy Hunting.
