Mongolian Style Shoulder

Has anyone tried to cook a shoulder Mongolian style? It looks to me that it is boiled over a wood fire with a seasoned broth and then served with Szechuan sauces.

Can you send the recipe you did or are looking at? I have a couple whole deer front shoulders I am trying to figure out how to cook.
