Meat grinder Horse power?

The reason I got the 1hp was because it was the highest hp in the #22 plate size.... so it has a very high power to funnel size ratio for stuffing casings right out of the grinder.

But like mentioned above if I saw a good price on a larger one, I'd jump on it!

I worked in the business for a while. You can certainly stuff sausage off a grinder, but a dedicated stuffer will let you control the feed better, which is important in that it takes a little skill to get a nice, consistent, air-bubble-free, fill into a casing (that, and you will break more casings if you cant control the rate of feed).

As for capacity on a stuffer, 5 pounds will make about 5-6 ring sausages, 20 brats/Polish/Italian links (max), or 30-40 hot dogs (super market hot dogs are usually 8 to a pound).
 
So if I got the 1.5 would I have a problem making sausage? I hear some guys say they like a dedicated sausage stuffer?

With the 1.5 hp and a foot pedal you can stuff sausage with ease. I returned the dedicated sausage stuffer because it worked so well.

It will go as fast as you can load it but working the foot pedal will allow you to slow it down if you need to. I've had issues making slim jims but sausage and summer sausage all day no problem.
