Start skinning where they lay. Some areas of Alaska require the meat be brought out in quarters, hinds, ribs, back, etc.
Otherwise just skin and bone out as you go.
Can't remember if I ever gutted a moose. I usually access the tenderloins by cutting off a few ribs.
