Knife for trimming fat

The dryer and colder your venison is will aid in trimming the meat too. I keep my meat in a good cooler with frozen ice packs. I use frozen gallon jugs of water. I usually keep 3 Gallons frozen and rotate them every other day. I use to use ice but that makes the meat wet which is ok but makes it a little harder to trim.

Wusthof classic 7” fillet. Very sharp. Very thin and flexible which is what you need for trimming silver skin and facia. Perfect length. I have all of the mentioned victorinox knives that are part of my butchering kit but the wusthof fillet is essential for getting those perfectly trimmed bars of red gold stacked up.

I like the old Dexter flexible boning knife the best , fillet knives work just fine too.
