The dryer and colder your venison is will aid in trimming the meat too. I keep my meat in a good cooler with frozen ice packs. I use frozen gallon jugs of water. I usually keep 3 Gallons frozen and rotate them every other day. I use to use ice but that makes the meat wet which is ok but makes it a little harder to trim.
