jerky with chopped vension

so i picked up one of these jerky cannons to give it a shot this year making the venison jerky with that. My question is for making jerky with venison chopped meat should it be straight venison chopped meat. Or does it need to be like burger chop meat with pork fat mixed in??

You don’t want to add fat to a restructured (ground) jerky. Use straight ground venison. You may need to grind it two or more times to help it stick together.

I use my grind meat that is already pre-packaged and season and jerky gun it all the time. I grind with 10% beef suet. Delicious

Forgot to mention that if you make snack sticks then you will want to add a little pork fat to your meat. Snack sticks are more like a sausage than jerky.

I’ve never made jerky with ground meat I take those cubes and smash with a tenderizer mallet, or fillet thin. I then marinate and dry in a smoker, or dehydrator, I won’t add chips to my smoker for my jerky.
