In depth tutorial on removing lower leg (butcher joint?) on Elk/Deer?

Cliff-curious why the words on video?
the couple times I have tested it, the ones with captions got way more distribution. it's probably worth another test... I may or may not continue doing it. a bit of a pain. I think a lot of folks need the words because they scroll instagram and yt silently while they are supposed to be doing something else 🤣

That is genius.
 
However you go about removing the lower legs, my advice is to carry a small pocket knife for that task.

I typically carry my fixed blade knife in my pack. That knife is kept sharp and protected. I'll use it for skinning and quartering.

The pocket knife is used for tasks that are likely to damage or dull the blade. In addition to cutting through the lower leg joints it is used for cutting rope and other camp tasks that are likely to dull or damage the blade.
