Moose, moose, whitetail, elk. Can’t find any good muley steak pics. 3/4-1 1/2” ish. When you’re cutting the steaks, cut them a bit thicker than you want because they’ll “spread out” a bit once off the whole muscle and then be thinner than you want. I also use a large victorinox curved breaking knife for better control on my cuts. Don’t use a small boning knife to cut steaks.
