How long do you let deer hang before processing?

7-10 days weather permitting. Always in the shade and the skin remains on till I bone out the meat

Not cold enough where I’m at to let the deer hang in a garage or barn, so I just field dress, get it home, and take the day butchering it. I always make sure though to let the meat sit in a fridge for about a week before putting any in the freezer. Always tastes good thus far.
