Hang from the head. Tried it legs up, head down... just found it easier with our setup for head up.

Correct, I never split. Just have to be a little more careful field dressing and pull everything through.

I keep a couple short lengths of cotton butchers twine in my kill kit to tie off the anus after it is loosened but before it is pulled through the pelvis.
