I have a little expierence in the mattress world. Typically if you spend under a grand on a queen size mattress, you won't have much life in the mattress. You can not pay a living wage and have inexpensive goods.
memory foam vs spring mattress. Personally the hybrid combo seems to work best. Memory foam is awesome, but it has a memory and will compress more and you will be in a hole. One sided mattress do need rotated to allow the material to come back. Roughly every couple of months, flip the head to the foot. You will need roughly 2 weeks of sleeping on one to truly get used to it.
The hard one for me to say is this: the mattress game can be real similar to the used car game.
When shopping lay down and put your feet up, if you are with your spouse, both lay down on the matt and roll around. The "boot" at the bottom of the mattress is for you to put your shoes on.
