I edc a folder, but I think fixed blades are the way to go for field use knives unless multitool.
If you're careful around bone, go with the stainless super steels like Elmax or s45vn. Stainless steels hold an edge better, but are less tough and more chippy. If you're not as careful, go with tool steels like 3v or cruwear. This is Bark Rivers steel chart according to their heat treat formulas. Apparently the new CPM Magnacut is supposed to be crazy good too.
If you're going the Bark River route and want a dedicated game knife, I think the gunny hunter lt, featherweight fox river, or featherweight hunter are all good bets. Personally, I'm waiting for the Fox River ext-1 in s45vn to drop in a couple months. My absolute favorite field knife of anything I've used.
