Goat recipes

I do some packing in the fall for goat hunts and end up with a ton of goat meat every year. Often times I just treat it like any venison in my common recipes, but it does seem to often be a bit tougher than your average deer (at least the bucks I kill!)
Do you guys have any recipes specific to goat?

I’ve found that once you get it all cut up the best preparation is to take it and trash it 😂

In all seriousness I’ve had bad and good goat meat. Best was cooked by a coworker from Trinidad. Is was slow cooked like a roast and tender. Worst was redneck bbq (overcooked).

No way! I like the stuff!
 
I always stew meat and pressure can any goat I get. The meat cuts apart with a fork after, makes the best stews and awesome for sandwiches. Straight from the jar is dang good too!!

Ooooh I don’t have a setup for that but love the idea.
 
Crook pot with black pepper garlic and salt. The whole family loved it. It was gone faster then any game I have brought home. Would love to have more.
 
We eat it like any other wild game. Never more than medium rare at most or low and slow. It is tougher than other ungulates but not impossible to tenderize. Growing up near the border we would have cabrito here and there and mountain goat is hands down better than that nasty stuff.
 
My wife's goat from last year got turned into a couple roasts and batches of chorizo and breakfast sausage. Doing it that way I couldn't tell it much from any other game meat. I've found good chorizo can hide a lot of flavor...
 
How close is it to domestic goat? Same musky sort of profile? I’m a huge goat fan, especially marinated and grilled or cooked in an Indian or Punjab style curry.
 
I wouldn't say its specific to goats but been making gyro's quite a bit lately out of my MG from last year making room for this year's goat. Both my wife and I have really enjoyed it.

Dad and I made Basque chorizo out of a mess of snow geese. It made even my grandpa, the most ardent waterfowl hater ever, say that was pretty good. Put enough cayenne, paprika and garlic on something and it's gonna taste good. I make it out of deer now and when I cook spaghetti my wife never knows it's not beef.
 
Mix goat , venison and veal and make a stew. You can add either cooking chocolate or plums it adds more sweetness to the gamy meat.

The more different meats you add to a stew it will be better.
