Getting hock smell on the meat

I've never had the luck to skin a bull, just a cow. But whitetail have the same gland and it can be funky.

Cutting those glands off is the very first thing I do (after tagging it if required of course) That's been ingrained in my head since a little boy. I just grab the skin far enough away from the gland and cut it out. Toss em, and don't worry about it any more. If you're careful enough you shouldn't get any on your gloves or your knife. Sometimes on a real bad one I will use my pocket knife for that part, then switch over to a havalon.
