Does anybody have a good recipe or process for gelatin by way of wild game parts( I’m assuming hooves)?

I've made aspic plenty of times.

Simply made a stock and strained. Keep reducing the stock and refrigerate, it will gel.

You can also just add hooves in with your bones when making stock. The tricky part is getting them clean enough to cook. I spent some time with a wire brush and soaking them in vinegar.

Yes I believe so. I have many cut out shapes like stars and hearts etc. I'm actually interested in the collagen aspect of it for my knees. Thought there could be cheaper way than to buy a container of it.

Hooves are made of keratin. If you cook them down you will get glue, not gelatin.

Stick to connective tissue and skin for collagen.
