Get a cabin away from town, and go into the park,
Lots of great flyfishing all around, just look on the map and find blue line streams in the park.

Cades Cove would be a great place to see lots of animals and fish, you may have to hike into a bit to get away from people…

Lots of places aroynd there to get peace and quiet.

I haven’t been there in probably twenty years but the Cataloochee Valley was kind of a hidden part of the Park when I worked there. Then you can hit Maggie Valley and the rest of Haywood CO.
 
Like the others have said, based on what you want, I'd look at other options than Gatlinburg as its zoo. Look into options on the NC side: Maggie Valley, Linville Gorge area, Brevard area, Black Mountain... a few variants of overall experience with varying amenities, all of things you are looking for without feeling like you are in a giant Buccees.
 
Perfect low key vibe Look for a private riverside cabin rental VRBO/Airbnb on a smaller trout stream instead of a big resort.

Think places like the Smokies, Shenandoah area, Catskills, or closer depending on your location fly fishing right out the door, no crowds, set your own pace. Many have separated cabins or cozy spots with hot tubs fire pits for relaxing.

Kayaking floating in April will be chilly wetsuits or drysuits, but doable on mellow sections. Pack layers and a good thermos.

This beats a scheduled resort more intimate and memorable. Book soon for spring availability. Congrats! What region are you in?
 
Is she really that cool or is she just trying to get some action from you? Just kidding but make sure she would absolutely HATE a more luxury girly thing. If she's usually down to do your kind of things this might be time to see a play or something.
 
As others have said, Gatlinburg is crowded. Go to NC.

Our fall hunting plans are getting messed up but we are trying to do a trip to Asheville this summer. We went to the Bryson City(?) area last year and it was way, way less crowded than Gatlinburg.
