Anybody know how to look at the accuracy of this thing when it is acquiring/has acquired satellites? My etrex seems to be more accurate and I can't figure out why

I'm not sure about accuracy. As far as battery life, I typically get about 2 weeks +/- when not using GPS. Last fall while hunting it lasted me 3 to 4 days between charges using the standard GPS mode. However I was also careful to turn GPS on and off as I needed it.

How has your battery life been? Mine seems to be very lacking and not up to what they are saying.
It helps a lot to go in and change some settings, such as backlight time on, turning off backlight on when you turn wrist, and other non-essentials. I find that I also set it up way different for hunting than I do when I'm just wearing it for EDU.
This vid helped me:

I dont know about the gps but I know the elevation is off...at my house it will read anywhere from -125' to 325' depending on the day.

Battery life has been pretty good, but I don't run it in track mode or anything like that when navigating. At home, I charge on the weekends and use during the week for at least an hour daily of cardio/running tracking. When I plug it in I still have at least two bars.

Mine too.
Elevation is based on pressure and that sensor is on the right side on the back of the watch against your wrist. So accuracy is just not going to be there. I found the same results so I used my handheld GPS to hold elevation when side hilling.

Mine is always way off. I took my 64st with me to compare today on my hike. I had 5.5 miles on the 64 with 1400’ of elevation. My instinct had 5.1 miles with 1100’ of elevation. I do this hike often and sometimes the elevation is under 1000’. Running the same loop the distance is never consistent with the instinct. I’ve talked to Garmin and nothing they had me do has helped.

That's interesting, the GPS tracking has been really consistent for me. I'm all over the board with my phone using the mapmyrun app tracking runs and hikes but the instinct is quite consistent for me as I repeat the same routes. Elevation isn't always reliable as mentioned but it's not horrible either. Seems like @Jordan Budd did a video review showing some settings to adjust that help. I don't remember what they were but I adjusted those settings as she described right after getting the watch and it's been great.

Changing settings to GPS+Gallaleo is the most accurate, as the guys at S&S told me. I changed it to that when I got the watch and it's always been accurate for me.

I’ve tried all 3 settings. It really didn’t make a difference. Maybe I just got a lemon.
