Ok everyone today I whipped up about 7 pounds of jerky, elk jerky. I used a elk liver, off the bull I harvested last September. My question is has anyone ever used a elk liver to make jerky? I have it in a marinade right now for a couple days and used my commercial meat slicer to get good 1/4" pieces so I am actually pretty pumped to do it so ya let me know what your stories are!
