if game meat gets frozen before rigor mortis works it way thru the animal, the meat is tough. rigor usually takes around 24 to work its way out. so basically don't have your animal frozen right away or butchered and frozen right away.

I agree that the wet aging method is your best option.

If the meat is tough, try using sous vide method.
Almost impossible to screw it up... then you’ll know if it’s you or the meat.

Biggest thing that makes any cut of meat tough is over cooking it

You either go low and slow till it hits a high temp like 200+ and shreds or you cook it rare. As mentioned above you can wet age too, which I have done 30 days easily before in my fridge.
