Dutch Oven recipes

My Elk chili. Rather than listing the ingredients, you will find them in the" cooking in the wild" section, under beans or no beans. I don't have a clue how to take recipe from cooking in the wild and post it here.

Desserts and bread is where it's at. Dutch oven is one of the best things ever for cooking
Recently on a big cooking over open fire kick

Cobblers
fill bottom with fruit
Blueberries, canned peaches, apples (but they take some pre cooking)
1cup flour
1cup sugar
2tbsp baking powder
1/4 cup milk
extra - brown sugar crumbles sprinkled on top

Bread is easy and delicious
4cups Flour
1.5 cups water
1 packet yeast
1 tsp salt

Corn bread
1 cup flour
1 cup corn meal
1tbsp baking powder
1/4 sugar
1 egg
Few tablespoons of oil
big pinch of salt
milk till it's pancake consistency
sometimes some honey drizzled on top

chicken soup
chicken thighs - skin and debone and cook down the bones and skin in pot
throw thighs in and brown
then add water and make stock
throw in mirepoix and garlic
shredded chicken back in, add water

Quiche
Pie crust bottom and 2" up side
Lots of eggs
heaping spoon of sour cream
then add whatever you want
go to is sausage pepper onion ham (pork roll)

Chorizo Cheese dip
chorizo
velvetta block of cheese
cheddar jack shredded
salsa
peppers (jalapenos and bell)

Place in Dutch Oven:
- parchment paper liner
- chicken tenderloins
- pesto (work it in)
- roma tomato wedges on top
- parmesan and mozzerella on top
- 5 lemon slices on top

Cook on coals 45 mins

Serve over rice.

Dutch Oven Nachos

Tortillas Chips
Leftover Chilli
Grated cheese
Sour cream
Lettuce; shredded
Tomatoes; chopped
Mild Salsa

Place tortilla chips in Dutch Oven and sprinkle with grated cheese. Bake with coals on Top and Bottom until cheese is melted (~10 minutes). Top with leftover chili, and more grated cheese. Bake in Dutch Oven until hot (~ 10 minutes). Top with remaining ingredients (or place on side) and serve.

Dutch Oven Mexican Beans and Rice

6 cans Pinto beans
1 lg White onion, chopped
3 cans mild Rotel tomatoes
1 cup bacon bits
2 cups water

1 can chicken broth

2 cups minute rice
Salt to taste

In a dutch oven, put the beans, onions, Rotel tomatoes and bacon. Add the water and chicken broth. Simmer with coals on top and bottom of oven until the onions are tender (~1 to 1 1/2 hours). Add the rice and remove from heat and let rice cook (~10 minutes). Salt to taste.

Apricot-braised Pork Loin

1 tb Vegetable oil
2 lb Boneless pork loin roast
1 1/2 c Chopped onions
1/2 c Chopped carrot
1 Clove garlic; minced
2 cn Apricot nectar; (12 oz. each)
1 ts Dry mustard
1 ts Salt
Watercress

Heat oil in Dutch oven over medium-high heat. Add pork and brown on all sides. Add onions, carrot and garlic; cook 3 to 5 minutes until onions are tender. Add nectar, mustard, salt and enough water to almost cover pork. Bring to a boil. Cover and bake 1 1/2 hours in preheated 375 degrees oven until meat thermometer inserted in thickest part reads 170 degrees. Remove pork; keep warm. Boil pan juices about 5 minutes until thickened. Serve pork with sauce; garnish with watercress. Serves 6.

All time favorite breakfast...MOUNTAIN MAN!!

Ingredients​

  • 2 pounds sausage
  • 2 pounds frozen hash brown potatoes
  • 8 eggs, beaten with ¼ cup water
  • 2 cups cheese, grated

Directions​

  1. In a 12 Inch Camp Dutch Oven over a full bed of hot coals, fry and crumble sausage.
  2. Remove cooked sausage and drain on paper towels.
  3. Using the sausage drippings in the pan, brown potatoes and spread them evenly in bottom of Dutch oven.
  4. Place cooked sausage over potatoes. Pour eggs over sausage layer. Sprinkle top with cheese.
  5. Cook with 8 coals underneath Dutch oven and 16 on top for 20 to 25 minutes, until eggs are cooked

Cobbler:

Melt a stick of butter in your dutch/camp oven
Combine
1 cup of sugar
1 cup of self rising flour

2/3 cup of milk
1 tablespoon of vanilla extract

Mix your dry ingredients with the wet ingredients and pour into the dutch oven.

Pour 2 cans(15-21oz each) of peaches(or whatever fruit you like) in heavy syrup

I like to add some cinnamon on top of the mixture in the dutch oven before I cook it.

Cook for 350 degrees for about an hour
