Deer heart

I love the heart. So many just leave it. My preferred way is to dice it up into little cubes and do a quick sauté in garlic butter. You will save them all from here on out.
Yeah this. And if I'm feeling fancy, I throw in some diced onions and peppers, and then use it as omelette filling. Great breakfast the day after a long pack out.

Or tacos.

Can't go wrong; just don't overcook it.
