In the late 70s, I made two set s of pack boxes (wooden panniers). Two of them are open and I use them for canned goods, paper towels, etc. One contains a stove, dutch oven, and a large frying pan. The last one opens the front like a chuck wagon, but also opens the top. I designed the inside compartments to fit dishes, silverware, spices, knives, cups, glasses, etc. The top compartments are spare parts, matches, replacement parts for lanterns and misc. items. Everything is set up for a hunting camp for four but with minor adjustments I have set it up for a field work group of 8.
The set up has worked well for over 50 years, two jobs and 5 remote hunting camps.
The were designed for horse camps but worked well for pickup camps for years. I spent 25 years in the field where I moved every other night to a new camp all over western Montana for 3-4 months each year.
I used 3/4 " plywood for the tops ends and bottoms and 1/4" on fronts and backs except for the chuckwagon that had a 3/4" front to prepare food on.
I even hit yard sales so the silverware was sterling. Use your imagination. Each loaded pannier weighs roughly 40 lbs.
