Minimum 3 kinds of beans in all the Chili I make.
Usually ground moose / deer or elk.
And yes, must have Chili Peppers!

Interesting little side-note.
If you add a few tablespoons of Maple Syrup to the mix, you can really spike up the heat content with no undesirable effects on your tongue, throat, belly and what follows after.

This particular "Canadian" comes from US stock, including a Grandmother who spent very some serious time in Mexico.
She made the hottest damn enchiladas & tamales the world has ever seen. But you simply could not put them down.

I follow her recipe for chili except for the addition of the maple syrup (an accidental addition years ago).

Now you’ve got me craving tamales. And I can’t find those around here so I’m gonna have to learn how to make them.

How does one accidentally add maple syrup? How has that just sitting out on the counter? Also, inquiring minds want to know how much to add? You know, for science…

Was making Gummy Bear Smoked Salmon that day.
Left the syrup on the counter, right next to another sauce I frequently add in.
Did not realize the syrup went in instead until it was already there.
So... went with it to see.
Now I use it every single time. Lets me bring the heat up well beyond anything I did before.

Alot of us use honey as a sweet flavor to balance the savory and spice. Also light beer or mexican beer instead of beef stock or water before simmering down.

I use 2 TBS of local-ish light honey. This year has been some Huajillo honey I bought.
 
I’ve always used a light beer for liquid instead of stock. But something semi-sweet like a syrup or honey never crossed my mind. I’m gonna give it a try. You guys can keep your cinnamon though. I’m not going that far.

No cinnamon.

Also they have tamales in Colorado. There are mexicans there. I seen them. You are just running with the wrong crowd.

Bonus points if the bees were pollinating the same plants that the protein was eating.

Finally, any hot-honey connoisseurs on the forum? My wife got me some for my birthday, and that stuff is liquid gold! I hoard my stash, and only bring it out for special occasions. It literally cured the flu a few days ago

Dont tell them everything!!!!

We can straight put away some whitetail meat with chili. raw meet of 0.25lbs for women and kids and 0.5lbs for men.
