Cincinnati chili - heads will explode. Beans are an option - if you get a 4 way, or included if you get a 5 way. Even though that's my preferred, I tend to think of it as different from "chili".

Yes to beans.
I’ve got a venison and green-chile chili recipe that has won every competition I’ve entered. So exactly 4.
But no way I’m sharing…

Texan here. I would never EVER disrespect a bowl of chili by defiling it with any kind of bean. Venison/beef, peppers, onion, tomato, chili powder, cumin, and salt. Served with cornbread or tortilla chips.

I'm curious from you non-bean guys, I want to try it and going with this recipe. Does this look good or what would you do different?

Similar to mine, I use maybe a few more ingredients, and about 12oz of Shiner bock rather than coffee.

Bacon, not chorizo or any other sausage. You want your meat and fat to be clean and then you slowly adjust your spices to taste over a few hours. Don't know why people hate on cinnamon. A half tsp here or there adds some nice depth. I'm not using cups of the stuff

I like bean soup just fine, even if it's a red sauce red meat bean soup. I just clarify that it's bean soup, not chili.

Minimum 3 kinds of beans in all the Chili I make.
Usually ground moose / deer or elk.
And yes, must have Chili Peppers!

Interesting little side-note.
If you add a few tablespoons of Maple Syrup to the mix, you can really spike up the heat content with no undesirable effects on your tongue, throat, belly and what follows after.

Cheers

This vote doesn’t count. Clearly Canadian.

I see that you spent $875 on firewood to make that chili.
Funny you said that. This was in the cleavland nation forest. Southern California. We were not supposed to be having a fire at that time( our stupid state) we convinced the camp host to let us have a fire. So we had to buy 1000.00 dollars of his provided crap wood. Go figure. 12° with snow on the ground with no fire allowed!!!
