Boots: light and fast or heavy and bomb proof?

Is there a boot out there that is good for sidehilling with a pack on for endless hours on steep mountainous terrain but doesn't have goretex so that when your boots do get wet on the inside they will dry easily?
That's what I am looking for. I am fine with approach/minimalistic/no goretex trail type shoes with hunting weight packs. When boots take forever to dry out its less than optimal. I have seen many times guys trying to dry out their fancy goretex boots by the fire. An exercise in futility. Yet I need the ability to sidehill with a pack.
 
Leather is the problem here. It takes forever to dry. It is more durable generally. Get a light 3 season mountaineering boot? They can be really light and are great for actual steep terrain. Not as comfy on the trail miles. They will all have goretex, which is fine and they'll still dry much faster than leather.
