Wanting to try my hand at making some venison bologna. Any good recipes out there?

I'm a fan of buying pre made seasoning, but the scratch recipe form Meateater is really good.

Curley’s ring bologna. It comes in a kit with the curved casings and seasonings and directions. Order online. Great product! I made 50 pounds of it this year.
