I have also wondered about this. Most of the time, I probably have plenty of gear for a night out and I'm never short on food. The one thing I could add is a bivy sack.
I honestly hate hiking out in the dark though. I'm just not going to sit out glassing, miles from camp/truck until it's pitch black. Maybe if I know there's something around that I really want to find... When you start well before daylight and work hard all day, I'm just over it by dusk and want dinner and sleep. I'll try again tomorrow is typically where my mind goes.
If it's a weekend trip or I'm running out of time, I'm a little more likely to push it.
