Best way to cook trout w a backpack stove

My son caught a trout unexpectedly on a backpacking trip and I only brought freeze dried food so I boiled some water and put the trout (gutted) in one of our used freeze dried pouches and poured in the water. Let it sit for 10 min and poured out the water. It was surprisingly good. Not the best way to cook a trout but less cleanup and no need to carry a pan.
 
Depends on size, but in a small skillet with oil or over a fire is my preference. If they're big enough, cut off the heads and make a soup stock with salt and seasoning.
 
Carry foil and a small amount of oil. Salt & Pepper. Switch between foil frying and cooking trout trussed on sticks.... both are delicious. Super light weight. We've "fried" brook trout on a big flat rock that we kept rotating into the red hot coals and moving coals around the "skillet." Good times. Can't beat back country brook trout.
