Unless I'm overlooking something, all of those changes seem surprisingly positive to me.

"Non-binary" put me in a pickle a few months ago.
My 10 y.o. daughter was with me and when she read the sex question, she asked what the heck " non binary" meant. On the way home I had to explain our family values and mental illness.

I don’t think they’ve commented on that. They could add it back in since this is a work in progress. My guess is that Form 4473 is intended to determine if you are legally allowed to purchase a firearm rather than the form isn’t really meant to classify a firearm type. I don’t know how many times in the past where I had a discussion with a dealer that an “action” is neither a handgun nor a rifle. I determine what it is when I complete the firearm.
