Antelope meat?

My wife loves the steak as well. Tenderloins and backstraps rarely see the freezer and get eaten fresh. We use the burger in any dish requiring burger. Both of us drew buck tags this year so hopefully we’ll have antelope meat through the winter
 
As others have said, get it skinned and on ice as quick as possible. When grinding for burger add fat. Antelope is one of the most under rated game meat. Been cooking them from the last 7 years and I get more compliments about lope than anything else I cook. Just wish they were bigger.
 
Antelope is our families favorite game meat. Backstrap, burgers, spaghetti, tacos, or whatever. Get it gutted and skinned right away and it's the best. I always add 20% beef fat from the local butcher and you're good to go.
