Ihave several pieces of cabelas branded gear that works and lasts. They made some good stuff. Redhead branded gear is terrible! Sportsman's Warehouse has been one of the better places to go over the years. What a crying shame that it, too, will go by the wayside.
Great recommendation on the Robby Denning book! It's a great "read" and gets the hunting juices flowing almost instantly! Knives are a personal thing....I'd let him pick unless you know what he's after.
My Leupold CDS system has been fantastic. For a hunting scenario, provided you have all the proper ballistic data for your load, it's hard to beat. Quick, easy, precise. Now, I don't really need it for anything under, say 350 yards, but I like to use my hunting rifles and loads for coyotes...

I'll second the Leupold FX3, but one of my all time favorite scopes is the old Leupold M8 6X36. Light, bulletproof, compact and usually can be had for around $200 when you can find one.
Optics are one piece of gear that I'll gladly except the weight penalty for better optical performance and a better viewing experience. I'm not sure what your expectations are for a 1lb spotting scope, but you might really be rolling the dice. My guess is that you'll not be pleased with the...
