I'll throw in the Mystery Ranch Blitz 35 as something to look at. I use it mainly as my one bag for travel. It can fit a lot of gear, and I can cinch a jacket down underneath the lid.
Some general guidelines that I think would be pretty relevant:
Tent wise, subtract 1-2 persons from the tent size. IE - a 2 person tent is more like a 1 person. A 4 person Tipi with a stove is more like a 2 person. Recommendations: Big Agnes Copper Spur 2P, Seek Outside Guardian, Argali...
Borah's sizing recommendation seems to be comfortably rated. I'm 6', 215lbs with a standard length/wide/side zip cuben bivy. I have plenty of room in the wide bivy, even with a wide pad. I'm not swimming in it, but i'm not constricted, even with my spare clothes tucked in.

I have two hip belt pockets added. That seems to give me enough space to keep my necessities close. Everything else goes in my backpack and is packed in order of accessibility.

Cimarron or Absaroka are probably the two most flexible options. Both have inserts for the early season critters and can utilize a stove for the late season stuff. They're big enough to fit two people + stove, but don't require a huge footprint.

We were on an early November hunt in southern Montana last year. I took my Guardian with small Light Outdoors stove. I spent 5 nights in it, some solo, some with another person, with and without the stove.

The Guardian can be finnicky to get a good pitch. A couple things that have helped me:
Have the stakes for the door as close to the bottom of the door as possible. You don't want any excess cordage between the bottom of the door and the stake.
Angle the trekking poles out a little bit so...
It really depends on what type of hunting your planning on doing. Are you planning on spike camping, or changing campsites frequently? Are you planning on sitting and glassing for extended periods of time? Or, are you planning to try to cut some fresh tracks?

I did not get the combo from them. I have the small (12") Lite Outdoors stove that I use in my Guardian. It's a really good combo. I was getting anywhere from 1-2 hours of burn time in that little stove and it kept the tent warm. We were able to dry our socks and boots out at night...
The Seek Outside Guardian is a palace for one. I spent a night in mine solo and it's an absolute palace for you, gear, and a small stove.
Otherwise, you'd have to jump up to a 4 person tent like the Absaroka or Seek Cimarron
I think you're spot on with Diamondback 10x42s.
I've looked through two pairs of Crossfires and one pair of Diamondback HDs. Both pairs seemed extremely hazy and I wouldn't recommend them. I'd spend the little extra money to be able to see significantly better with the Diamondback HDs.
