I've been very pleased with the sheep meat from my DBHS. Some of the cuts are a little chewy, but the flavor is excellent! Cooked up some backstrap with sautéed onions and mushrooms last week. Everyone agreed it was excellent.
I was surprised after my sheep hunt how thin skinned sheep are. Any rifle/bullet combo capable of taking down an antelope or deer would suffice. My 300WM was definitely overkill.
Not necessarily easy, but doable. I did it on an archery hunt a number of years ago. In 2022, I managed to get a deer, but not a bull on the combo. If you can afford it, I say go for it.
I used a Kifaru 8-man tipi for over 10 years. Loved that tent! But the biggest issue with it is finding a flat area large enough to set it up, especially if you packing in off the beaten path. It can take some creative campsite selection to find a spot that all of you can sleep on a flat area...
I have both. Bought the SxS two years ago when my daughter was born. Now I don't use the quad anymore. We love going out as a family in the SxS and it's a much smoother ride than any other vehicle I've owned on rough dirt roads and trails. Saves a lot of wear and tear on my truck.

Two things - First is the glassing pad. I use a half a thermarest z-rest. Folds up small and it is a luxury for long glassing sessions. Sencond - the cord/stake combo for helping guy out legs/quarters while breaking down an elk by myself.
I have an AR in 308 I built up. Killed a number of pigs with it. And my buddies kid used it for his first elk. It’s a little on the heavy side for packing around on an elk hunt all day, but the minimal recoil was ideal for the kids first big game hunt.
