I smoke it all, bone in. Low and slow, then shred it like pulled pork, vac seal and freeze.

So good. I also put a heavy dry rub all over it before smoking.

I like taking cubed chunks and making either a stew or chili. Use a pressure cooker to cook the meat in a beef broth for 45 minutes. Then I add the other items, recipe is constantly changing depending what I have in the garden or cupboard. Most people I feed it to have no idea that they are eating bear and not beef.
